The writing in Mother 3 is incredible. I think about the ending all the time, it really, really sticks with you.

Honestly, I think they COULD do a remake? Maybe Itoi wouldn't be interested in it, but, there have been so many excellent remakes recently, both really bold reenvisionings like FF7R and Super Mario RPG remake, and HD-2D stuff like they did for Live-a-Live and Dragon Quest... Nintendo could absolutely print money on a Mother trilogy update.
